I think I will start a series on this blog called PUT IT ON A PIZZA, which will mostly be pizzas made out of leftovers.
The first installment was the Pesto Pasta Puttanesca Pizza, which I have made probably 4-5 times in the last few days.
The second installment: scrambled tofu pizza! Rachel made some scrambled tofu yesterday using some veggies from our garden, and later that day, it ended up on a pizza with some more of the pesto we have in the fridge. The verdict? Pretty delicious. Somehow, the pesto flavor mixed with the almost curry-ish flavor of the scrambled tofu made for one tasty pizza. Or maybe I’m just crazy.
